Three ways to add truffles to your homemade sauces

Here’s a truffle rule to always remember: truffle flavor compounds are carried by fatβ€”think butter, cheese, rich meats and egg yolks. These same ingredients often form the base of many great sauces, which makes adding truffles to them a surefire way to bring depth, elegance and irresistible aroma to any dish.

Truffle Hollandaise: Simply sub in truffled egg yolks and truffle butter in your hollandaise recipe. Try it over grilled vegetables, roasted salmon, or eggs Benedict. Want to take it a step further? Add shallots and tarragon for a BΓ©arnaise-style finishβ€”perfect over a steak. 

Pan Sauce: After cooking your meat, add red wine to deglaze and scrape up the fond (all those delicious browned bits left after the meat sears), plus a knob of truffle butter and shaved truffle. Drizzle the truffley pan sauce over your meat for the final touch. 

Black Truffle Mayonnaise: Elevate our housemade mayonnaiseβ€”or make your ownβ€”by adding fresh black truffle or white truffle oil. Use the truffle mayo for deviled eggs, potato salad or slathered across a sandwich piled high with Thanksgiving leftovers.
